Meet the Founder of Rodizio Riverwalk and Phakalane. Paulo Marques.

Tell us about your restaurant and type of cuisine?

Paulo: We are a Brazilian fine dining restaurant that specializes in meat and prawns.

 

 

Why did you choose this particular cuisine?

Paulo: I am Portuguese and love Brazilian food. I wanted to share the exquisite taste of Brazilian food with Botswana.

 

 

Why did you decide to go into the restaurant business?

Paulo: To bring a taste of Brazilian food to Botswana and boost local tourism through my passion for food and good service.

 

 

What’s your secret to keeping customers coming in?

Paulo: Consistency in both service and product quality.

 

 

What are you most proud of about your restaurant?

Paulo: The achievement we have had in the past 8years,namely the opening of phakalane, the business relationship we have made and maintained  with our corporate clients. The familiar relationship we have gained with our Individual clients who we like to consider as family.

 

 

We all know service is key. How do you motivate your staff to deliver the highest standard of customer service?

Paulo: We treat them as family by being actively involved with them in terms of implementing their thoughts and ideas into the running of the business on a daily basis.

 

 

How often do you innovate on your menus?

Paulo: Annually, though we have weekly specials.

 

 

What are the best ways for graduating students to find a job in restaurant management? How can they best break into the field?

Paulo: Rome was not built in a day, so they would simply apply as waiters and get a feel about Rodizio as a business. Growth opportunities are there for them to eventually become administration clerks and managers, provided they showcase their full potential.
